Cauliflower, a northern delight

July is just around the corner, which means the first cauliflower harvest is on its way too !

areas Choux-fleursOriginally from the Mediterranean region, it has been cultivated for thousands of years. This vegetable has spread throughout the world, and many different varieties have appeared. As well as the classic white cauliflower, there are other varieties, such as orange cauliflower, purple cauliflower and green cauliflower, which differ in colour and appearance.

This popular and tasty vegetable belongs to the Brassicaceae family, along with green cabbage or broccoli, and is characterised by its rounded shape made up of small, dense buds called “fleurettes”.

When are cauliflowers harvested ?

Cauliflowers harvest periods are diverse and varied in different parts of the world. Our cauliflowers come from the north of France and Flanders in Belgium. The harvest season for this much-loved vegetable is divided into two parts, the first is in July and the second is from September to November.

How are they treated ?

Immediately after harvest, the cauliflowers are trimmed in the field. Once this stage has been completed, our partner Pasfrost washes the vegetables, then sorts, calibrates, cuts and blanch them before freezing.
