Definition

Made from a cold confection, a technique that only we can control, the Perlés® keeps the taste and texture of fresh fruit. These pieces of frozen semi-candied fruit are perfect by marking, inclusions or decorations. You can also use them to create fodder (chocolates, macaroons, etc.)
Raw: The origin of perlés®, pieces of semi-candied fruit accompanied by their confection juice.
Stabilized: Pieces of semi-candied fruit bound by a thickened juice: soft texture, easy to work.
Concentrated: Pieces of semi-candied fruit concentrated: high fruit content, high brix and low Aw (does not moisten pasta).
The Lemon Perlé® is available in conventional and organic!
