Pan-fried morels in cream sauce

An autumnal recipe with morels, perfect for a Sunday meal!

Rehydrate 300 g of dried morels according to the instructions. Melt a knob of butter in a frying pan. When it foams, add the drained morels and sauté for 2 minutes.
Add chopped shallot, sweat for 1 minute, and add a dash of Noilly-Prat wine or equivalent. Reduce and add 150 g of heavy cream.
Continue cooking for 10 minutes. Remove the mushrooms from the sauce, arrange them on the plate and add the cream sauce that you have reduced or made rise with butter. Decorate with fresh herbs.
