Mashed potatoes with truffle

Well-known for its taste and aroma, the Truffle is an exceptional product known since antiquity. Gastronomic treasure, it is one of the most popular products at each end of the year, although the best time to harvest them is in February.

This underground mushroom is generally found at the foot of trees known as “truffle trees” such as oaks, beeches and chestnut trees. With its firm and crunchy flesh, its pronounced odor and its delicate taste, it goes perfectly with the simplest as well as the most sophisticated dishes.

To highlight this refined product, we suggest a simple recipe which will accompany meat or fish to perfection: the mashed potatoes with truffles.

For this recipe, you will need potatoes, salted butter fresh cream, truffles and truffle oil (to prepare yourself). You can use canned truffles for this side dish, which are more affordable than fresh truffles.

Preparation of the truffle oil

Container

20 – 25 cl

Utensils

Sterilized glass jar or bottle (20-25cl)

Mandolin or peeler

Tea or coffee filter

Ingredients

Olive oil (or vegetable oil of your preference)

10 to 20 slices of truffles ( according to the size of the truffle)

Truffle oil

Step 1 :

With your mandolin (or peeler), finely slice your truffle.

Step 2 :

Place the slices in the jar and cover with the chosen oil.

Step 3 :

Put the jar in the refrigerator.

Step 4 :

After a week, filter the oil for a better preservation.

The minimum time necessary to obtain the truffle’s taste is 3 hours. The longer you leave the truffle in the oil, the more pronounced its taste will be.

Preparation of the mashed potatoes with truffles

Truffle

Ingredients (4 p.)

1kg of potatoes (Monalisa, Bitje,…)

20gr of salted butter

25cl of cream

40gr of truffles

salt and pepper

Step 1 :

Mould the truffles and add them to the cream. Film and set aside in a refrigerator.

Step 2 :

Peel and rinse the potatoes, plunge them into a pot of boiling water and let them cook for 20 to 30 minutes (depending on their size).

Step 3 :

To check for doneness, poke the potatoes with a knife. Once cooked, drain and mash with a potato masher or fork.

Step 4 :

In a pan, melt the butter and heat the truffle cream over low heat.

Step 5 :

Gently mix the cream and butter with the potatoes and a drizzle of truffle oil. Add salt and pepper to your liking.

You can enjoy your delicious mashed potatoes with meat or fish.
